Blackened Cod with Avocado Mango Salsa

Ingredients

Mango Avocado Salsa

  • 1 mango, chopped
  • 1 large avocado, chopped
  • 1/4 red onion, diced
  • Lime juice to taste
  • Salt to taste

Blackened Seasoning

  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon white pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Pinch of cayenne pepper

Other ingredients

  • 3 tablespoons butter
  • 3 (4 ounce) cod filets

      Directions

      1. In a medium sized bowl, mix the mango, avocado, red onion, lime juice and salt. Set aside.
      2. In a small bowl, mix the ingredients for the blackened seasoning.
      3. Heat the butter in a large nonstick skillet over medium heat.
      4. Coat each piece of cod with the blackened seasoning mixture.
      5. Cook for 2-3 minutes per side, depending on the thickness of the fish.
