Avocado Deviled Eggs

Ingredients

  • 6 eggs
  • 1/2 medium avocado
  • Lime juice to taste
  • 1/2 small jalapeño
  • 2 tablespoons chopped cilantro
  • 2 tablespoons mayo
  • 1 tablespoon minced red onions
  • Kosher salt to taste

      Directions

      1. Bring a medium sized pot of water to a boil. Gently lower the eggs into the pot. Cook for 12 minutes.
      2. Drain the eggs and then place them in a bowl of cold iced water until they are cool enough to handle.
      3. To prepare the filling: Peel the eggs and slice them in half. Separate the yolks from the egg whites.
      4. In a small bowl, combine the yolks, lime juice, jalapeno, cilantro, mayo, red onions and salt.
      5. Use a pastry bag or spoon to the egg white halves with the avocado mixture.

      Notes

      If you don’t have a pastry bag, you can cut the tip off of a plastic sandwich bag and use it.
