Avocado Deviled Eggs

Ingredients
- 6 eggs
- 1/2 medium avocado
- Lime juice to taste
- 1/2 small jalapeño
- 2 tablespoons chopped cilantro
- 2 tablespoons mayo
- 1 tablespoon minced red onions
- Kosher salt to taste
Directions
- Bring a medium sized pot of water to a boil. Gently lower the eggs into the pot. Cook for 12 minutes.
- Drain the eggs and then place them in a bowl of cold iced water until they are cool enough to handle.
- To prepare the filling: Peel the eggs and slice them in half. Separate the yolks from the egg whites.
- In a small bowl, combine the yolks, lime juice, jalapeno, cilantro, mayo, red onions and salt.
- Use a pastry bag or spoon to the egg white halves with the avocado mixture.
Notes
If you don’t have a pastry bag, you can cut the tip off of a plastic sandwich bag and use it.
