Ingredients
Mango Avocado Salsa
- 1 mango, chopped
- 1 large avocado, chopped
- ¼ red onion, diced
- Lime juice to taste
- Salt to taste
Blackened Seasoning
- 1 teaspoon kosher salt
- 1 teaspoon dried oregano
- ½ teaspoon white pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Pinch of cayenne pepper
Other ingredients
- 3 tablespoons butter
- 3 (4 ounce) cod filets
Directions
- In a medium sized bowl, mix the mango, avocado, red onion, lime juice and salt. Set aside.
- In a small bowl, mix the ingredients for the blackened seasoning.
- Heat the butter in a large nonstick skillet over medium heat.
- Coat each piece of cod with the blackened seasoning mixture.
- Cook for 2-3 minutes per side, depending on the thickness of the fish.
