Avocado Summer Salad

  • Dressing
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh dill, chopped

Other Ingredients

  • 1 large avocado, diced
  • 3 persian cucumbers, sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese


    1. In a small bowl, mix the ingredients for the dressing. Set aside.
    2. In a large bowl, toss the avocado, cucumbers, cherry tomatoes, red onion and feta cheese.
    3. Pour the dressing into the bowl. Mix until combined.
