Avocado Pasta Salad with Bacon

Ingredients

  • 8 ounces medium pasta shells
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumbers
  • 1/4 cup diced red onions

Dressing

  • 1/2 large avocado
  • 3/4 cup buttermilk
  • 1/4 cup mayo
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives
  • 1 teaspoon dried parsley
  • 2 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar

Directions

  1. Cook the pasta al dente, according to the instructions on the package. Once the pasta is done cooking, drain it and rinse with cold water.
  2. While the pasta is cooking, place the bacon, chopped tomatoes, cucumbers and red onions in a large bowl. Mix to combine.
  3. In a blender, combine the ingredients for the dressing. Blend until smooth.
  4. Add the pasta, along with the dressing to the bowl and mix all the ingredients until combined.
