Ingredients
- 8 ounces medium pasta shells
- 8 slices bacon, cooked and crumbled
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumbers
- 1/4 cup diced red onions
Dressing
- 1/2 large avocado
- 3/4 cup buttermilk
- 1/4 cup mayo
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh chives
- 1 teaspoon dried parsley
- 2 tablespoons lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon sugar
Directions
- Cook the pasta al dente, according to the instructions on the package. Once the pasta is done cooking, drain it and rinse with cold water.
- While the pasta is cooking, place the bacon, chopped tomatoes, cucumbers and red onions in a large bowl. Mix to combine.
- In a blender, combine the ingredients for the dressing. Blend until smooth.
- Add the pasta, along with the dressing to the bowl and mix all the ingredients until combined.
